I love a good cookbook. In fact, it's fairly obvious I have an obsession with cookbooks! Just take a look at the photo below.
This was after a move, where I did get rid of a few I didn't use. I know, I know, that's a lot of cookbooks. I love trying new things and very rarely find a whole cookbook I love.
What I have struggled to find was a healthy cookbook that kept me wanting more! Well everyone, I have found it! I follow healthfest (aka AJ) on instagram for what seems like years now and have loved the things she posts. She was offering some of her followers the chance to apply to be a beta tester for her new clean eating meal plan. I was wanting to get my eating back into a healthy kick and so I thought I'd give it a try! What I didn't know is how SUCCESSFUL I would be at the meal plan. She has 4 meals plans that you can choose from: clean eating, vegetarian, paleo and gluten free. I tried a little bit from clean eating, vegetarian and paleo.
Guys... first of all, AJ is a genius in the kitchen! She knows how to mix ingredients together to make TASTY and DELICIOUS meals. I think she should have her on show on the Food Network, seriously.
A few of my favorites from her plan were:
Skillet Bowls-I make this once a week!
Choco-Cocoa Fudge- it's paleo and melt in your mouth good. I don't even realize I'm eating a treat.
Sticky Berry Wings-that sauce tho!
Sweet and Sour Chicken
Smoked Pork
A knockout marinade for grilling steak or chicken
Greek Yogurt Parfaits
Greek Pita Pizza
Ham and Cheese Egg Muffins
Cafe Rio Sweet Pork Salad Copycat
They were a mix from all varieties of meal plans and were SOOO good. The others were equally as good. These are just ones that I've made over and over again. :)

Ok... now onto what I loved about this:
1-I have never been able to follow a meal plan (or any healthy eating kick for that matter) for longer than a week. With this one, I thoroughly enjoyed the recipes and looked forward to trying new things.
2-She uses leftovers and/or the same ingredients to help you use all the ingredients you purchased. I loved that not all of my produce went to waste for just one meal. It was also great because if I had leftovers, I could use them for lunch the next day!
3-she offers breakfast, lunch, dinner and a snack for 30 days. 30 days people! That's a lot of recipes!
4-I was satisfied and felt great about what I was eating.
5- I think this was the most important for me. It helped me not care so much about my body image. I knew what I was putting into my body was healthy, and that was enough for me to be happy with myself.
I've continued using her recipes from this plan and also purchased another cookbook! Money was well spent!
