Mediterranean Veggie Wrap

I've been changing my eating habits to be healthier than the past. So far it's been working great! I cut out soda and limit my sugar intake. I also try to cut out gluten-or at least use whole wheat when eating grains. Nothing too crazy yet, just trying to get the hang of things.

This has been my go to lunch. I love it! It's sweet but salty. It has a nice crunch to it and the flavor is great!

Ingredients:

1 Whole Wheat Wrap
Hummus-I like to mix mine with minced garlic
1 handful of spring garden salad mix
sliced cucumbers
diced tomatoes
pomegranate kernels
bell pepper cut into strips

Directions:

Spread the hummus on the whole wheat wrap (I use about a tablespoon or so). Add the veggies and fruit. Wrap it up and enjoy!

Chicken Salad Sandwiches

A few girls got together for lunch every week for a couple months and exchanged recipes. This recipe was one of them. I am not a huge meat fan, but I'm slowly trying more things with meat in it. This is something that I could eat without even thinking there was meat in it. I use this for baby showers, when I'm hosting parties, or even when I just want to have some girls over for lunch.


Here are some of the ingredients that go in it:





Since I use it a lot for parties, I like to prep before hand (usually the night before). I chop my green veggies and shred my chicken. I keep them in their own air tight container and then add them in the next day along with everything else.


Ingredients:
1 cup sour cream
1 cup of mayo
2 Tablespoons sugar (you could also use agave instead)
1-2 Tablespoons vinegar
2 teaspoons curry
1/2 teaspoon salt

Rotisserie chicken, about 1 full breast shredded
purple grapes, just a handful or so, sliced in half
3 green onions chopped
2 stalks of celery chopped
1/2 bag of craisins
1 Fuji apple
1-2 cans mandarin oranges
1/2 cucumber, quartered
1/2 green bell pepper

Directions:
Mix the first 6 ingredients together in a bowl. Taste and add any other ingredients to flavor the way you like it.

 Add the remaining ingredients by mixing them together. It keeps in the fridge for a few days, if it lasts that long. I just serve them on my homemade rolls found HERE

Grilled Apple, Bacon and Cheddar Sandwich with Roasted Red Onion Mayo

Ingredients:
Sandwich:
2 slices (1/2-inch-thick) sourdough, multigrain or another hearty bread
4 slices thick-cut bacon, cooked crisp
4 slices Cheddar
1/2 Granny Smith apple, cored, sliced thin
Roasted Red Onion Mayo, recipe follows
Butter

Directions:
Preheat a grill pan or griddle over medium heat. Assemble this sandwich just as you would a traditional grilled cheese sandwich: spread 1 slice of bread with some Red Onion Mayo, then top with 2 slices Cheddar, the bacon, the apple slices, then 2 more slices of Cheddar, finishing with another mayo-slathered slice of bread. Butter the outsides of the bread and transfer to the hot grill. Grill about 3 minutes per side, since this sandwich is so thick. Remove to a cutting board and cut the sandwich in half on the diagonal to serve.

Roasted Red Onion Mayo:
1 medium red onion, chopped
2 teaspoons olive oil
Salt and pepper
1 cup mayonnaise
Preheat oven to 375 degrees
On a small rimmed baking sheet, toss the red onion, olive oil, salt and pepper together. Roast in the oven for 25 to 30 minutes until the onion is very soft, stirring occasionally. Remove from oven and let cool. Transfer to a food processor and buzz until finely chopped. Add the mayo and pulse until smooth and combined.
Weight Watchers Points = 14 per sandwhich
*This one is a lot of points, but so worth it!
